I don't really want to link my real number to dating apps like Tinder. I value my privacy and just don't feel comfortable with apps having access to my contact data. Is there a workaround or a method to get verified without using my personal number?

On top of that, Tinder can request additional verification including the phone number, and at that point there's no way to confirm it. I used a turkey number to register like I was from Turkey. I'd say these numbers are great, but for simpler websites and situations where you just need a one-time account confirmation. Tinder is serious about user safety, and it can flag those numbers as suspicious.
